Even the best knives lose sharpness when used. Therefore, a sharpening steel should be used regularly. Only knives with serrated blades (such as bread knives) don’t have to be sharpened. Usage tip: hold the knife’s blade at an acute angle (about 20°) to the sharpening steel. Alternate sides when pulling the blade with even pressure across the sharpening steel.
