Indeed Balik Smoked Salmon is one of the finest smoked salmons of the world.

In 1978, Hans G. Kübel built with the help of the grandson of the purveyor to the last Russian tsar, Israel Kaplan, the first oven to smoke salmon in the Toggenburg. A few weeks later, he introduced the Balik Side Classic to the gourmet scene of Switzerland. It was the first side of salmon that had already been parried, e.g. exempted of fishbones and smoking skin.

Gravlax literally means "buried salmon" and is a Scandinavian way of preparing salmon. Since the Middle Ages, the fishermen up north burried freshly caught salmon in the sand above the high-tide line in order to preserve it. The result was a slightly salted and
fermented delicacy. Inspired by this ancient tradition, we adapted and interpreted this method, creating the Balik Side Gravlax.

The Balik Overture Gravlax is a small portion of the entire Balik Side Gravlax.

After smoking and trimming, the Balik Side Classic is covered with a mixture salt, sugar and dried dill and left to marinate for at least one day in the cool. The Gravlax is then sliced and vacuum packed.

The Balik Overture Gravlax contains five to six slices of smoked salmon.
